Pecan Choc Chip Cookie Dough Balls

I'm going to go ahead and put my hand up and say 'I'm not a fan of some of the raw cakes/ balls/ desserts out there. Yep, there I said it. I feel like I am committing blasphemy but in my eyes, you're either all in or all out. If I want to have a brownie, I'm going to have a brownie, not a date and hemp seed concoction because it's not going to abolish my cravings. HOWEVER, my new recipe is a game changer. To be honest I was a bit gutted that I wasn't capable of enjoying the healthier versions so I made it my divine mission to create something that genuinely tasted unhealthy but was full of the good stuff. Yes, this has dates, and yes, this has nuts, but the way it's flavoured is what makes all the difference. A pinch of salt can work wonders and the combination of ingredients really makes these balls taste like chocolate cookie dough. I dare you to try them and say otherwise!

Ingredients

  • 100g Cashews
  • 100g Pecans
  • 200g Dates (soaked for min 20mins)
  • 50g Oats
  • 1tbsp Chia (milled or whole)
  • 1/2 Tsp Vanilla Powder or paste
  • 1Tbsp Coconut Oil (Gently melted)
  • 2 Tbsp Almond Butter
  • A good Pinch of Fine Pink Himalayan or Sea Salt
  • A decent handful of very dark chocolate chips!

Optional : You can add a tablespoon or two of Cacao Powder to make them even chocolatier!

Method

  1. You will need a blender for this one! Pop all of the dry ingredients (nuts, oats, flavours, seeds) into the blender and blend until a dusty consistency.
  2. Drain the dates and add to the blender along with the melted coconut oil and almond butter and continue to blend until clumpy.
  3. Chop the chocolate and stir the chips into the mix.
  4. You may need to add a few drops of water to get the desired consistency (blame the chia), but the mix should resemble a dough that isn't too sticky. It needs to be easy to roll between your hands.
  5. Roll into balls and pop onto a plate and into the fridge for half an hour to set.
  6. Enjoy!
