Strawberry Shortcake Pancakes

People have always said that breakfast is the most important meal of the day, and they’re dead right, but the main aim is to make sure you break your fast with nutritious food that will keep you energised and satiated until lunchtime. I love to put a little extra time into my breakfasts at the weekend so it's nutritious, but still feels like a real treat, and these pancakes really tick all of the boxes.

Rich in healthy fats, protein and slow-release carbohydrates, these vegan dessert-style pancakes are my favourite way to start the day. Gone are the days where pancakes were a once-a-year affair before we made our Lenten sacrifices! Try these at home and let us know what you think, and don't be afraid to mix it up by adding your favourite healthy toppings and syrups!

Ingredients

*Makes 6-8 pancakes

Method

  1. Begin by mixing two tablespoons of your egg replacer in a large mixing bowl with 1 one tablespoon of water until it reaches a paste-like consistency.
  2. Add quinoa flour, baking powder, ground almonds, vanilla essence and coconut milk to the bowl and whisk all the ingredients together until combined.
  3. Allow to chill for 15 minutes in the fridge -This will help the mixture to thicken – and chop strawberries in the meantime
  4. Set your hob to medium heat
  5. Add coconut oil followed by your pancake batter and cook for 5 minutes approximately, flipping occasionally.
  6. Top with chopped strawberries and drizzle with syrup of choice*
  7. Enjoy!

*For the Chocolate Syrup

  1. Gently melt coconut oil in a heat-proof bowl.
  2. Add cacao powder, water and sweetener. 
  3. Mix well until the ingredients well-combined and it reaches a smooth consistency.
