Kombu is incredibly versatile and used often in Japanese cuisine. It has a savoury taste with a sea flavour and a hint of smoke. Texture wise it is thick and fleshy with a gently bite to it. 
It can be added to soups, stews, casseroles, and goes well with beef, chicken, fish and seafood, smoked fish, pulses, vinegar, dried mushrooms and rice.
It can also be used to help break down the enzyme inhibitors within beans and lentils to help digestion and assimilation of nutrients when boiled together in the same pan.

Nutritionally kombu contains lots of iron, sodium, chromium, fibre, protein, vitamins A, C, D, E, K and the B vitamins. It is high in iodine, calcium, magnesium and potassium.
