“I’ve been making these Coconut Cacao Bonbons from The Little Green Spoon for ages as they are really quick and totally hit the spot. Plus, they’re perfect for when I’m craving to eat all the sugar!
They’re Gluten Free, Dairy Free, Vegan and Paleo so cover most dietary needs!

Coconut Cacao Bonbons from the Little Green Spoon
1 Cup Desiccated Coconut
½ Cup Ground Almonds
1 Cup Dates
2 Tablespoons of Raw Cacao
1 Tablespoon of Maple Syrup/Honey (sometimes I like to use Biona Coconut Blossom Nectar for a richer taste)
Pinch of Salt (I use pink Himalayan)
These will keep in the fridge for a week or so if they last that long!

Over this time, Lloyd has certainly learnt a thing or two about moreishly good food, and today he has a treat up his sleeve for us - he’s sharing his really tasty Chia Pudding recipe with us – hurrah!

Today I’d like to share with you all one of my most favourite and simplest of desserts.
It’s just so easy and quick to make and really does take less than 5 minutes to whip together.
I have not yet met anyone who has tried it that has not loved it, so I hope you enjoy it just as much!
It is so tasty and so nutritious, packed with fibre, omega 3 and protein to keep you fuelled and energised all day long.
Personally, I like it kept simple, but if you want you can top it with fresh berries, a drizzle of maple syrup, toasted nuts, a teaspoon of nut butter and some banana coins.
All of the ingredients for this Chia Pudding can be purchased in Nourish, and once you have the core ingredients, you can make multiple batches of it and change up your toppings to suit each day, or just eat it as is.
I hope you all really enjoy it!
Chia Pudding Recipe
½ cup - Infinity Chia Seeds
¼ cup - Infinity Organic Desiccated Coconut
1 teaspoon - Dr Coy’s Stevia/Erylite
1 teaspoon - Nua Naturals Vanilla Powder
1 tablespoon - Biona Org Creamed Coconut
1 cup - Rice Dream Org Original Rice Milk
Dissolve the coconut cream by mixing in a bowl with a little boiling water, just enough to melt it.
When it can be stirred and is smooth, mix in the other ingredients.
Let it sit for a minimum of 30mins so that the chia seeds have time to soak up the liquid - I find it tastes even better after an hour or more of soaking time.
Store in the fridge and enjoy!
I find it usually stays fresh for up to 3 days.

We’ve been munching on these festive gingerbread people here in the Nourish office all day and I feel it would be crime not to share the recipe with you all!

This receipt was adapted from Heidi Swanson’s 101 Cookbooks
4 cups white whole wheat flour
3/4 tsp Doves baking soda
1 tsp salt
4 tsp ground ginger
1 tsp ground cloves
1 tbsp ground cinnamon
1/2 tsp finely ground black pepper
11 tbsp Pure Sunflower spread
2/3 cup coconut sugar
3 teaspoons Orgran No Egg made with 6 tablespoons water
2/3 cup Meridian blackstrap molasses
Sift the flour, bicarbonate of soda and spices into a medium sized bowl.
In a large bowl, cream the Pure Sunflower spread for about a minute with an electric mixer, then add the sugar and beat for another minute.
Add in the No Egg mixture and beat for a moment, followed by the molasses. Mix until combined.
Slowly fold the dry ingredients into the wet.
Once incorporated, divide the dough into two balls, wrap in cling film or baking parchment, and put in the fridge to chill (this is vital!)
It is best to let this dough rest in the fridge overnight, as it will be much easier to roll out and cut into shapes the next day.
Having chilled the dough, preheat your oven to 175 degrees.
Roll the dough on a lightly floured surface, or between two sheets of baking parchment for less of a clean-up.
Cut into your desired shapes and transfer to lined baking trays. For traditionally sized gingerbread people, bake for 7-10 minutes.
*7 for soft gingerbread, or 10 for crunchier biscuits that can be dipped into tea! Keep in mind that smaller shapes will need less baking time.
