Easy Three Bean Chilli Winter Warmer



  • Heat oil in a large pan and then add the onion, carrot and red pepper
  • Cook on a medium heat for 10 minutes until onion is soft and lightly browned
  • Add garlic, ginger and spices, gently stirring and cook for a further 5 minutes
  • Drained beans, and chickpeas  and add along with chopped tomatoes and 250ml water
  • Oscassionally stirring, simmer gently for 45 minutes
  • Stir through the lime juice, and season with a generous pinch of salt and pepper
  • Can be served with cooked brown rice, and topped with plain yoghurt and fresh coriander
