Buckwheat is actually a fruit seed that is related to rhubarb and sorrel and not related to wheat and is naturally gluten free. This makes it a great gluten free substitute for those who are sensitive or allergic to grains containing gluten. Buckwheat is sold either unroasted or roasted, with roasted being also known as 'Kasha'.
Regarding flavour, unroasted buckwheat has more of a soft, subtle flavor, while roasted buckwheat has a stronger, earthier taste that is more distinct and nuttier. It is also darker in colour.

Buckwheat is a very good source of manganese and a good source of copper, magnesium, phosphorus and dietary fiber. Buckwheat is also a good source of high quality protein, containing all eight essential amino acids.

Buckwheat can be used as a porridge, an alternative to rice or cous cous, added to soups, stews or casseroles. It can also be ground down in to a flour and used as a gluten free flour alternative.
