Sugar kelp is similar to kombu, however the coating on sugar kelp has a greater quantity of a sugary substance known as mannitol, hense the name sugar kelp. Kombu however has more of a sodium based mineral substance on it. The taste therefore is similar to kombu, though slightly sweeter. The texture is slightly crunchy with a fleshy consistency.

Nutritionally, sugar kelp contains vitamins A, C, D, E, K and the B vitamins, as well as iron, sodium and chromium. It is particularly high in iodine, calcium, magnesium and potassium.
