Ghee is a type of clarified butter traditionally used in Indian cuisine. It is made by simmering butter over low heat until the water evaporates, after which the milk solids are discarded, leaving behind only the liquid fat. It has a higher smoke point (250°C) than most vegetable oils, making it ideal for deep-frying.

How to Use Product

Golden Roast Potatoes recipe by Happy Butter

Ingredients:

  • 3-4 Tbsp Happy Butter Ghee or Golden Ghee
  • 12 medium potatoes scrubbed with skins on.
  • Bulb of garlic
  • Rosemary
  • Sea salt

Instructions:

  1. Pre-heat oven to 200 ºC
  2. Cut the scrubbed potaoes into medium sized pieces. Place potatoes in a big pan of salted water and bring to the boil. Boil for 5 mins.
  3. Meanwhile spoon 3-4 Tbsp ghee on to a baking tray and put in the oven.
  4. Strain the boiled potatoes in a colander and leave to dry off a bit for 2-3 mins.
  5. Shake the potatoes in the colander to scuff the edges.
  6. Take the hot tray with the hot ghee out of the oven.
  7. Carefully, one potato at a time turn to coat all sides with the hot ghee. Tongs are good for this.
  8. Crush a bulb of garlic and place in the centre of the tray of potatoes.
  9. Sprinkle with a good pinch of salt.
  10. Cook for 15 mins then check and turn the potatoes. Add some sprigs of rosemary. Cook for another 10-15 mibs until golden and crispy.
